Bikini Recipe

Serves 10 people

To make the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Syrup: Combine all the components into a saucepan, heat until it reaches a simmer, mixing to dissolve. Then, turn off the stove and leave to cool fully. Decant into a sterilised bottle, seal and refrigerate it in the fridge, it will last for about a month.

To make Premix: Combine all the liquid ingredients into a large bottle, let it rest for 60 minutes, then filter it best through cheesecloth, so it's completely strained.

To serve: Add 85ml of your batch mix to a mixing glass packed with ice, gently stirring gently for about 60 seconds to chill. Pour to a chilled martini glass or a similar vessel, garnish with some cranberries adding the final touch with a light spray of mandarin oil above the glass.
